• 1 lb of sweet potato
• 2 TBSP white sugar
• 1 egg, beaten
• 1/4 teaspoon salt
• 1 TBSP butter, softened
• 2 TBSP milk
• 1/4 teaspoon vanilla extract
• 1/4 cup packed brown sugar
• 3 TBSP all-purpose flour
• 2 TBSP butter, softened
• 1/4 cup chopped pecans (optional)

1. Pierce potato with fork 4-5 times.
2. Heat oven 375 degrees F
3. Once oven is turned on put potato in oven for 60 minutes - 75 minutes
a. Instead of oven (Put potato in microwave for 5 – 8 minutes depending on size.)
4. When potato is cooked, remove it and let it cool for about 15 minutes (it will be very hot)
5. Set oven to 325 degrees F.
6. In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract.
7. Mix until smooth.
8. Transfer to a mini baking pans.
9. In medium bowl, mix the brown sugar and flour.
10. Cut in the butter with 2 knives until the mixture is coarse like bread crumbs.
11. Stir in the pecans.
12. Put ¼ inch layer of the mixture over the sweet potato mixture.
13. Bake in the preheated oven 25 minutes, or until the topping is lightly brown.
