Steamed Apple Pudding Recipe

1 cup grated apple
1 cup grated carrot
1 cup grated potato
1 1/4 cups sifted all purpose flour
1 tsp salt
1 tsp soda
1 tsp cinnamon
1 tsp allspice
1 tsp nutmeg
3/4 cup sugar
1/2 cup butter
1 1/2 cups seedless raisins
1/2 cup chopped nuts

Combine grated apple, carrot and potato.

Sift flour, measure and sift again with salt, soda, spices and sugar. Cut in butter with pastry blender. Combine all ingredients. Turn mixture into well greased molds, filling not more than 2/3 full. Cover with aluminum foil or a couple of thicknesses of greased brown paper; tie down.

Steam in a closely covered steamer for 3 hours. Serve hot with a lemon or brandy sauce. NOTE: If desired, this can be made ahead of time. Cover and refrigerate. Re-heat about 1 hour.
