3 sticks butter
1 cup white sugar
1 egg
2 tsp vanilla
1/2 tsp salt
2 1/2 cups flour
1 cup cornstarch
2 cups toasted, finely chopped pecans
Jar really good raspberry jam
Powdered sugar

Directions:
Directions:
Cream butter and sugar. Add the egg and vanilla. Mix together the dry ingredients. Add dry ingredients to wet ingredients. Stir in pecans. Wrap dough in plastic wrap. Chill for one hour.

Flour surface. Roll half of dough about 1/2 inch thick. Using your favorite round, star or heart shaped cookie cutter, cut out cookie bottoms. Place dough onto parchment paper. Bake on 350 degrees until edges are lightly browned. Cool completely. Roll remaining dough about 1/2 inch thick. Cut matching shapes for the cookie tops. Cut a small circle out of the cookie tops. Bake until edges are lightly browned. Cool completely.

Spread about one Tbsp of raspberry ham on cookie bottoms. place onto powdered sugared parchment paper. Place tops onto cookies. Dust generously with powdered sugar.
