3 Eggs
1 Cup Oil
2 Teaspoon Vanilla
2 Cup Grated Zucchini
2 Cup Sugar
3 Cup Flour
1 Teaspoon Baking Soda
1 Teaspoon Salt
3 Teaspoon Cinnamon

Directions:
Directions:
Mix wet ingredients in a bowl. Add dry ingredients. Stir until moistened. Pour into 2 greased and floured 5x9 loaf pans. Bake at 325 for 1 hour or until toothpick comes out clean. Cool in pan until you can touch, then cool completely on wire rack. Freezes very well.
