1 pound Italian Sausage
1 cup Onion, coarsely chopped
2 cloves Garlic, minced
5 cups Beef Stock
½ cup Water
1 cup Red Wine
2 cups Tomatoes, chopped and seeded
1 cup Carrot, thinly sliced
½ teaspoon Basil
½ teaspoon Oregano
1 (8 ounce) can Tomato Sauce
2 cups Zucchini, sliced
8 ounces Fresh Cheese Tortellini
3 tablespoons Parsley, chopped
1 medium Green Pepper, coarsely chopped

Directions:
Directions:
Brown sausage and reserve. (I put the sausage in a colander with paper towels and try to remove as much grease as possible before transferring sausage back to the pot.)
Remove all but 1 teaspoon of fat from pan. Saute onions and garlic until tender. Add everything up to and including tomato sauce in pot with onion, garlic, and sausage. Gradually bring to a boil. Reduce heat and simmer for 30 minutes.
Skim fat off. Stir in zucchini, tortellini, parsley and green pepper. Simmer covered for 35-40 minutes until tortellini is tender.
