2 cups all-purpose flour
1 cup sugar
¼ cup grated lemon peel
1 cup milk
¾ cup vegetable oil
2 tablespoons poppy seed
2 tsp. baking powder
½ tsp. salt
2 eggs, slightly beaten

Directions:
Directions:
Heat oven to 350º. Generously grease the bottom only of a 9x5-inch loaf pan with shortening; lightly flour. (don’t use cooking spray). In a large bowl, stir together all ingredients until moistened. Pour into pan. Bake at 55-65 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Loosen sides of loaf from pan; remove from pan and place top side up on cooling rack. Cool completely, about 2 hours. Wrap tightly and store at room temperature up to 4 days, or refrigerate.
