4 large chicken breasts
2 sleeves Ritz crackers
1/4 tsp salt
1/8 tsp pepper
1/2 cup milk
3 cups sharp cheddar cheese
1 tsp dried parsley

Directions:
Directions:
1. Crush crackers. Cut each chicken breast in to 3 pieces. Pour the milk, cheese and crackers in to 3 separate bowls.. Toss the salt and pepper in to the cracker crumbs and stir the mixture around to combine.

2. Dip each piece of chicken in to milk, then cheese. Press cheese in to chicken with your fingers. Then press chicken in to cracker crumbs and press it in. Spray a 9 x 13 pan with cooking spray and lay chicken in pan.

3. Sprinkle dried parsley over the chicken. Cover with foil and bake at 400 for 35 minutes. Remove the foil and bake for an additional 10-15 minutes or until edges of chicken are golden brown and crispy.
