1 15-ounce can black-eyed peas
3/4 cup oil
1/4 cup (or less) cider vinegar
1/4 cup onion, minced
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
Directions:
Drain peas and place in medium bowl.
Combine oil, vinegar, garlic, onion and salt and pepper.
Pour over peas.
Cover and refrigerate 2-3 days.

Mom made black eyed peas almost every New Year's day and forced everyone to eat at least one bite for "good luck." In her pre-teen years, Taylor would put on goggles that covered her nose to force down one bite of sauerkraut and one black eyed pea to make sure she didn't ruin any good luck.
