1 Cedar Plank, soaked in water for 20+ minutes
1 whole (approx 2 pound) Salmon Filet (with or without skin)
½ cup Brown Sugar
2 tablespoons Canola Oil
1 tablespoon Thyme Leaves, dried
1 teaspoon Cayenne Pepper

Directions:
Directions:
Preheat a gas grill to high and adjust to medium for grilling.
Combine brown sugar, thyme, cayenne, and oil in a bowl.
Place salmon on cedar plank (skin side down), folding thin end of filet under. Spread sugar mixture over the salmon.
Place the planked salmon on the grill grate and cook with grill covered for 30-40 minutes, or just until the surface fat begins to turn white.

Note: The salmon can also be cooked with or without the plank in a 325º oven for about 25 minutes.
