1 TBSP oil
1 Chicken breast, chopped
1 Onion, chopped
2 TBSP butter
11/2 TBSP curry powder
1/4 tsp garlic powder
1 (13.5 oz) coconut milk
1/2 cup raisins (optional)
1/2 apple, peeled and grated (optional)
1 packed cup fresh baby spinach (optional)

Heat oil in large frying pan over high heat. Cook the chicken and onion in the pan, stirring often, for 6 to 7 minutes to lightly brown the meat. Transfer the chicken and onion to a bowl,

Turn the heat down to low, and melt the butter in the pan. Stir in the curry and garlic powder, and cook until the mixture starts to bubble (about 1 to 2 minutes)

Stir in the coconut milk, raisins, and grated apple. Then add the chicken and onion. Cover the pan and simmer the chicken curry for 10 minutes.

Stir in spinach and simmer for 2 more minutes.

Serve over rice!
