3 medium onions, thinly sliced
1 T butter
1 T oil
˝ tsp dry thyme
˝ cup sherry or brandy
8 cups chicken bullion
4 cups beef stock
1 baguette sliced in to at least 12 pieces, lightly buttered and toasted
8-12 oz nice Swiss cheese
Salt and pepper to taste

Preheat large stock pot, add butter and oil then the onions and cook over high heat until caramelized but not black.
Add the thyme, cook 30 seconds, remove pot from heat and add the sherry to deglaze, caution…it may spatter and ignite. Reduce volume by half then add stocks, cover and simmer 30 mins. Season with salt and pepper. Meanwhile preheat broiler.
Portion soup into oven proof bowls, top with toasted bread and cheese. Place until broiler and bake until cheese is golden brown. Caution…bowls are extremely hot!
