2½ Cups All-Purpose Flour
¼ tsp. Table Salt
1 tsp. Baking Powder
¾ Cup Unsalted Butter (softened)
1¼ Cups Sugar
1 Egg
2 tsp. Vanilla Extract

Directions:
In a medium bowl, whisk together flour, salt and baking powder. Set aside

In bowl of electric mixer beat butter until smooth, 1-2 minutes. Add sugar, beat until fluffy, 2 minutes. Add egg and vanilla, beat 2 minutes longer. Scrape down sides of bowl, add flour mixture and beat on low speed until combined. Dough should be soft but not sticky.

Divide dough in half and pat each into ½-inch thick rectangle on large piece of wax paper. Freeze 30 minutes to firm slightly.

Preheat oven to 350º. Line baking sheets with parchment paper.

On a well-floured surface, roll half of dough to ⅛-inch thickness. Cut into desired shapes and transfer to sheets, placing 1 inch apart. Bake until lightly browned at edges, 12-18 minutes. Transfer to wire racks. Repeat with remaining half of dough (re-rolling scraps once). Cool completely before icing. Cookies will keep, tightly covered, for 1 week.
