¼ cup vegetable oil
1.5 lb pork loin, cut into 1” cubes
1 medium size onion, thin slice
1 Tbsp garlic, minced
1.5 Tbsp red curry paste
2 tsp curry powder
6-8 dried red chilies
1 Tbsp fresh ginger, minced
½ butternut squash, peeled, seeded, cubed
1 14 oz can diced or crushed tomatoes
3 cup chicken stock
1 13 oz can coconut milk
4-5 kaffir lime leaves (optional)
1 Tbsp fish sauce
¼ cup sweet soy or brown sugar
½ cup cilantro, chopped

Directions:
Directions:
Heat oil in heavy bottom pot over medium to high heat. Add pork and brown on all sides.
Reduce heat to medium and add onion, garlic, curry paste, curry powder, chilies and ginger. Cook until onions are soft.
Add stock, coconut milk, kaffir lime leaves, and tomatoes . Bring to boil then reduce heat to a simmer. Cover and continue to cook approx 20 minutes. Add squash and cook an additional 10-15 minutes.
When squash is tender, add fish sauce, sweet soy and fresh cilantro.
