9 eggs ( 7 separated)
1 3/4 cup brown sugar
2 tsp. Vanilla
1/4 cup cold coffee
2/3 cup potato starch
1/3 cup cocoa
Tsp cinnamon
1 cup chopped nuts (optional)
Ungreased cake pan

Directions:
Directions:
Heat 7 egg yolks with 2 whole eggs in a saucepan. Add brown sugar, vanilla, and cold coffee. Sift together, potato starch, cocoa and cinnamon. Add nuts (optional) pour into untreated cake pan. Bake 325 50 minutes. Frost and decorate.
