4 eggs (separated)
1 cup sugar
1 cup sifted cake flour
1/4 tsp salt
4 T cold water
1 tsp baking powder
1/2 tsp lemon extract
1/2 tsp grated lemon rind

Directions:
Directions:
Beat egg yolks until thick and lemon-colored.
Beat in sugar gradually. Sift flour and salt together and add alternately with water to sugar and egg mixture. Add lemon extract and rind. Beat egg whites until foamy, add baking powder and continue beating until they hold a point. Fold the egg whites into the egg yolk mixture. Pour into ungreased pans.
Bake at 325º for 30 minutes.
