Directions:In a saucepan, add the cod and cover with water. Let boil over medium-high heat Cut plantain in two equal part and put it boil Drain the cod and soak in cool water. Shred the boiled codfish, drain and set aside In a skillet, heat the oil and sauté the remaining ingredients. Add the cod and sauté lightly for 2 mins add water and let water to a boil for about 5 minute Serve with boiled plantain you also add vegetable on the side |

Notes: Waking up to that smell of Haiti is different from the United Stated, It the smell of freshness, new day, tropical, peace, and coffee. Early morning being in Haiti, every day I woke up to my fresh smell of coffee and my grandmother always seemed to be cooking, what time did she wake? Now I know it was before the rosters woke up. I was about 5 years old and my grandmother was in the yard cooking over the charcoal fire (chabo) with a big black pot early in the morning and I was really hungry. Coffee and Bread was always given as a pre-breakfast. Breakfast in Haiti was a feast as a little kid. I knew the coffee was good but the food was what was on my mind. Right now what I would do for a cup of Haiti coffee, not imported, and not from the city of Haiti but the top of the mountain of the country. I was bugging her for food and she said little girl (tifi) leave me alone it almost finish. When the food was ready it was one of my favorites: boiled plantains with salt fish and boiled eggs (Banan avec more ak ze bouyi). She made this beautiful plate with the boiled plantain on the left side cut in two little slices while the codfish was in a creole sauce with onion and green pepper, and cut the boiled in half you could smell it miles always. I was only five but I knew this food was good. As she passes me by she went to give my father his food first, then she made another plate and she proceed to give my male cousin a plate, Then my mother then my sisters starting from the eldest. I became very angry and began to yell “ Grandma why you giving everyone food before me I have been telling that I am hungry all this time” With her soft voice “ The man must eat first” and then oldest to youngest. Then she proceeded to give my sister some food I was so furious I grab the knife that was nearest to me and went to stab my grandma. (I know I would have killed my kids if there every try something like that) but I was five I pick up the knife backward when my grandmother tried to stop in pick me in the eye, lucking enough it hit above my left eye underneath my eyebrow, till this day I still have a mark under my eyebrow. My mom said that because of that act I was never going to grow I would be a midget for the rest of my life. (I guess that why I am short.) And yes I got a beaten from my mom, dad, and they told my grandma to beat me, but she loves me unconditional and understood that I was just a child. She just held me in her loving hands and told me to never do that again. And then She made me a nice plate of banan avec mori ak ze bouyi
