The Lawrence Family


1 package of penne pasta
1 bunch of spinach
2 medium zucchini’s
1 bunch of basil
1 cup of pine nuts
4 raw garlic cloves
1 cup of grated Parmesan cheese
½ cup of olive oil
Salt and pepper to taste

1. Salt water in a large pot.
2. Boil pasta 1 minute less of package instructions in salted boiling water.
3. Blanch zucchini for 2 minutes in salted pasta water.
4. Place blanched zucchini, raw garlic, raw spinach, pine nuts, basil, olive oil and pepper all inside blender and purée.
5. Drain pasta and leave inside large pasta pot. Combine all puréed veggies on top of pasta and mix well.
6. Serve pasta individually with parmesan cheese generously sprinkled over the top.
