4 lbs cubed red potatoes
¾ cup chopped onion
2 tbsp olive oil
1 can cream of celery soup
16oz sour cream
2 cups shredded sharp cheddar cheese

Directions:
Directions:
Place potatoes in large pot covered with water. Bring to a boil and then turn down heat to a simmer until tender but not mushy, about 15 min. When done, drain and cover with paper towel to absorb moisture as they cool. Meanwhile, cook onions in olive oil on medium heat until soft and beginning to brown. Mix together cream of celery soup, sour cream and cheddar cheese. When potatoes have cooled, add them to the sour cream mixture along with the cooked onion. Spread in a serving dish and heat in a 350º oven until heated through and lightly browned.
