8 cups marinara sauce
3 eggplants peeled and sliced
2 lbs Italian sausage or lean ground beef
3 cups grated Parmesan cheese
Pam olive oil spray

Directions:
In a large skillet, crumble the sausage (remove casing if using links) over medium heat until cooked through and lightly browned. Set aside to cool.

Eggplant has a lot of moisture, after peeling eggplant, slice in 1/2" slices and lightly salt each side, stack between layers of paper toweling for approximately 20 to 30 minutes: using a paper towel wipe the excess salt and moisture off each side of the eggplant, spray each side of eggplant lightly with spray olive oil and place on a foil covered broiler pan, broil until lightly browned on each side.

In a lightly greased deep sided rectangular baking dish place about 1 cup of the pasta to that it covers the bottom of the pan, then one layer of the browned eggplant 1/3 of the browned meat, and about 1 to 2 cups pasta sauce, then sprinkle 1/3 of grated Parmesan cheese. Continue layering with the eggplant, meat, sauce and cheese.

Cover the casserole with foil and bake in a 350 degree oven for about 1 hour: remove foil and continue baking for about 15 minutes or until bubbling and the cheese has melted and lightly browned. Serves 8
