1 can Salmon or Mackerel, drained and skin removed
1 egg
½ cup yellow onion, chopped
½ cup green bell pepper, chopped
2 tablespoons all-purpose flour
2 tablespoons corn meal
2 tablespoons mixed seasons:
Salt, Old Bay, Garlic Powder and Black Pepper
2 cups canola oil
1 cup fish batter

Directions:

In a medium bowl combine salmon, egg, onion, bell pepper, flour,corn meal and seasoning. Form patties and place on a baking sheet. Refrigerate the patties for 1 hour or more. In a medium saucepan bring oil to temperature. Being careful, gingerly roll or dip the patties into the fish batter and then carefully drop into the oil.

Fry patties for 3-5 minutes or until golden all over. Flipping halfway through cook.
