2 cans or 3-4 lbs sweet potatoes, 1½ tsp corn starch, ½ cup of sugar, ½ cup firmly packed brown sugar, 2 tsp. orange rind, 1½ cups of orange juice, 2 tbls. butter.

Directions:
If using whole sweet potatoes cook, peel and cut into bite size slices. Use a greased oblong 2 quart dish. Arrange the potatoes in dish. In a saucepan mix sugars, cornstarch, orange rind, Gradually add orange juice ,stir until smooth,Add butter. Cook over medium heat stirring constantly until thickened and boiling. Pour over sweet potatoes Bake in a 350º oven till bubbling and hot. Garnish with chopped pecans.
