Turkey Broth:
Leftover Turkey Bones
Water
2 Carrots
1 Onion, roughly chopped in quarters
2 Celery Stalks
1 tsp Sage (to taste)
1 tsp Oregeno (to taste)
Salt
Pepper

Soup:
3 Carrots, peeled and chopped
3 Celery Stalks, peeled and chopped
1 Package of Spatzle or Egg Noodles (from the Polish store)

Directions:
Directions:
Put leftover Turkey bones in a large soup pot and cover with water, add the onion, carrots, and celery. Add in sage, oregano, salt and pepper to taste.

Bring water to a boil over medium heat. Reduce the heat and simmer for at least one hour (the longer you simmer the stronger it tastes.)

Once the broth is complete, put through a strainer to remove the turkey bones and vegetables.

Return broth to the soup pot, add in peeled and chopped carrots, diced celery and noodles. Bring to a boil and simmer until vegetables are cooked through.

Serve with some fresh bread and butter! Enjoy!

Tip: Feel free to add more of the spices after 45 minutes if the taste isn't quite right!

Tip: Oma buys her noodles at the Polish Store! You can also make homemade Spaetzle noodles with eggs, flour and water!
