Directions:Preheat oven to 400 degrees F. Grease or line a baking sheet.
In a medium saucepan combine water, butter, and salt. Bring to boiling. Add flour all at once, stirring vigorously. Cook and stir until mixture forms a ball. Remove from heat. Cool for 10 minutes. Add eggs, one at a time, beating well with a wooden spoon after each addition.
Drop 12 heaping tablespoons of dough onto prepared baking sheet. Bake for 30 to 35 minutes or until golden and firm. Transfer cream puffs to a wire rack and let coo at least 10 minutesl.
Cut tops from puffs; remove soft dough from inside. Fill with whipped cream, pudding, or ice cream. Replace tops.
If desired, sift powdered sugar and or favorite fudge or butterscotch sauce.over tops. |

Notes: I loved to cook and bake with Mema. She was quite a cook and very willing to share what she knew with me. Her doughnuts were to die for and sales of them helped them make it through the Depression. For Halloween she made Popcorn Balls for special trick or treaters. We ate Sunday dinner at their house often, always had Christmas dinner ofnthe Sunday before Christmas and celebrated my mother's Dec. 23 birthday then. Christmas Buffet at their house was a neighborhood and family tradition. Oddly, gross as it sounds I looked forward to her Suet Pudding with Hard Sauce, made only on Christmas, as I grew older..
