1 1/2 envelopes unflavored gelatin - 1 1/4 c. sugar
1/4 t. salt - 6 eggs (separated)
1/3 c. water - 2/3 c. lime juice
2 tsp. grated lime rind - 1/2 tsp. cream of tartar
baked shell - 1/2 c. heavy cream (whipped)

Directions:
Directions:
In saucepan mix gelatin, 1/2 c. sugar and salt. Beat egg yolks with water and lime juice. Stir into gelatin mixture. Cook, stirring constantly until gelatin dissolves and mixture thickens slightly (about 6 minutes). Add rind. Cover and refrigerate stirring occasionally til mixture mounds when dipped from spoon. Beat egg whites with cream of tartar till stiff. Add remaining 3/4 c. sugar and beat til stiff. Fold in gelatin mixture. Chill 20 minutes. Put in shell and chill. Serve with whipped cream.
