1-10 oz. bag spinach, rinsed
2 eggs, hard boiled and diced
¼ cup Parmesan cheese, grated
4 thin slices red onion, diced
2 Roma tomatoes, diced
DRESSING
½ cup vegetable oil
¼ cup white sugar
2 T. white vinegar
¼ tsp. dry mustard

Directions:
Directions:
In a container with a tight fitting lid, mix together all dressing ingredients and shake well. Set aside until ready to serve, shaking occasionally.
In medium serving bowl, toss together all salad ingredients, except tomatoes. Cover and refrigerate until ready to serve.
Just before serving add tomatoes and dressing and toss.
Makes 6 to 8 servings.
