2- 8 oz. boneless/skinless chicken breasts, cooked and cut in cubes
1 cup celery, diced
½ cup green onions, sliced
1-8 oz cansliced water chestnuts, drained
1 small head Chinese cabbage, shredded
1 cup frozen peas, thawed
1 cup mayonaise
1 T. lemon juice
1 T. soy sauce
¼ tsp. black pepper
1 cup cashews
½-5 oz, can Chow Mein noodles

Directions:
Directions:
In large serving bowl mix together, first six ingredients, cover and refrigerate. In a small bowl, mix together mayo, lemon, soy, and pepper. Cover and refrigerate. Just before serving add cashews and Chow Mein noodles to salad bowl. Stir in dressing and serve. Makes about 8 to 10 servings.
