3 chicken breasts, cook and shred
2 ½ cups cooked Israeli couscous (follow instructions on the box) - you can find at Trader's Joe's
1 cup Kalmata olives, cut in half
1 English cucumber, sliced (cut slices in half)
1 pint grape tomatoes, cut in quarters
Half a red onion, diced
6 oz. pkg. crumbled Feta cheese
Dressing:
Lemon juice, olive oil and seasoned salt
or Primal Kitchen Greek Dressing brand

Directions:
Cook chicken, shred. Put in large bowl. Cook couscous. Let cool. Add olives, cucumbers, tomatoes, onion; add Feta cheese. Mix in couscous. Stir. Add dressing. Serve.
