1 cup all-purpose flour
1 cup plain cornmeal
1 tsp. salt
2 tsp. baking powder
1 egg
About 1 cup milk
About 1/3 cup oil

Directions:
Directions:
Heat oil in a cast iron skillet in a 400º oven. Mix dry ingredients and add egg and milk (start with 3/4 cup and add as much as more as you need to make a batter that is just liquid enough to "burp" when you stir it). Stir in hot oil and pour into hot skillet. Bake 20 - 25 minutes, until golden brown.

This is the first recipe I learned to make without a recipe. I remember Daddy bragging about my cornbread, but I think now that it was his way to get me into the kitchen to help Mother with the cooking. We had cornbread at almost every evening meal. That's truly a southern thing!
