3 eggs
1½ cups vegetable oil
2 cups chopped apples
1½ cups sugar
1 tsp. vanilla
3⅓ cups flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. cloves
⅔ cup chopped nuts
⅔ cup raisins

Directions:
Directions:
Beat eggs, oil, apples, sugar, and vanilla on low speed for 1 minute (scraping occasionally).
Add flour, baking soda, baking powder, salt, cinnamon, and cloves.
Beat on low speed, scraping bowl occasionally, until moistened (about 15 seconds).
Beat on medium speed for 45 seconds.
Stir in nuts and raisins.
Spread in two greased and floured loaf pans (9"x5").
Bake at 350º for 55-60 minutes.
Cool for 10 minutes before removing from pans.
Cool completely before slicing.
Refrigerate leftover bread.

Carrot Loaves: Substitute 2 cups shredded carrots for apples.
Add 2 tbsp. orange zest with the vanilla; omit raisins.

Rhubarb Loaves: Substitute 2 cups chopped rhubarb for the apples.
Add 2 tbsp. lemon zest with the vanilla; omit raisins.

Squash Loaves: Substitute 2 cups shredded squash for the apples; omit raisins.

Sweet Potato Loaves: Substitute 2 cups shredded sweet potatoes for the apples.
Add ½ cup shredded coconut with the vanilla.
Add ¼ cup water with the flour mixture; omit raisins.

Zucchini Loaves: Substitute 2 cups chopped zucchini for the apples; omit raisins.
