4 jumbo sweet potatoes
1 pound of butter
Sugar to taste
2 teaspoons Vanilla
Nutmeg to taste
6 Eggs
Evaporated milk
deep dish pie crust

Directions:
This recipe makes 4 deep dish Sweet potato pies.
Preheat the oven to 300º
Peel sweet potatoes, and add whole potatoes to large pot and cover with cold water. Bring to a boil reduce heat and cover with lid on medium heat. Cook until you can insert a knife in center of potato. (try not to break up potatoes). Once done remove potatoes into a strainer with a big spoon to drain all water. Add potatoes to the mixing bowl ( all potatoes may not fit in bowl at once). Blend until smooth, add in soften butter one stick at a time until well blended. Add in sugar a cup at a time and taste for desired sweetness. Add vanilla and nutmeg to taste, add small amount of evaporated milk and blend well last taste before adding eggs. Add eggs one at a time until all are added. Blend.
Remove bowl from mixer make sure not to let the pulp from the beaters fall into the bowl. Pour mixture into pie crust (do not over fill) 3/4 full. Place in oven bake for 1.5 to 2 hours until the pie is solid and golden brown. Remove from oven and let cool. Serve warm or cooled. refrigerate leftovers
