Ingredients:  
1 lb ground turkey
1 cup roasted peanuts
3 ripe tomatoes (or 2 cans diced tomatoes)
2 cans of beans (I prefer 1 can black beans & 1 can kidney beans)
1 onion slices
1 teaspoon cumin (or more for flavor)
1/4 teaspoon salt
1/4 teaspoon pepper

Directions:
Directions:
1. Cook ground turkey until no longer with any pink, drain.
2. Cut up onion and tomatoes and add to cooked turkey
3. Add other ingredients
4. Cook with occasional stirring for 20 minutes
5. Cool and serve

Additional options: diced peppers, sliced mushrooms, other vegetables, 1/2 cup cooked quinoa top with sour cream, top with sliced cheese
