1 lb yellow squash
1 onion (chopped)
6-8 crackers-white or Ritz
½ stick butter/margarine
2 eggs
1½ cup grated sharp cheese
¼ cup milk
1 tsp salt
¼ tsp black pepper
1 tsp sugar

Boil squash and onion with salt, drain when done; mash; add cheese, butter, eggs and milk; Add crushed crackers; Season with salt and pepper; Cook at 350º F for 20 minutes until topping is brown and casserole bubbles. Serves about 8 people.

Love this casserole...I will admit that the ingredients definitely take away the "healthy" squash base, but it is wonderful!!! When David has the garden going in full swing it is hard to use up all the squash so this is a great way to begin! Enjoy!!
