1 carton cold heavy whipping cream
2-4 tablespoons sugar
1 teaspoon vanilla extract

Before getting started, place your mixing bowl and beaters in the refrigerator or freezer for about 10-15 minutes to chill.

In the bowl of a stand mixer fitted with the whisk attachment, or in a large mixing bowl using a hand-held mixer, add the heavy whipping cream. Start mixing on low speed, then increase the speed to medium-high until soft or stiff peaks form. Don't over mix or you will make butter.
When the whipping cream is at the desired thickness, fold in gently the sugar and vanilla.
