German Potato Soup with Kelbasa Recipe

2 Tbsp vegetable oil
12 oz Kielbasa, or polish sausage, medium dice
1 large yellow onion, medium dice
1 tsp garlic, minced
2 tsp herbs de Provence
1.5 tsp caraway seed
5 medium potatoes, washed, peeled, diced
6 cups chicken stock plus 2 tbsp chicken paste
1 17oz can sauerkraut, drained and rinsed
1 cup heavy cream
1 cup sour cream (optional)
¼ cup grained mustard
½ cup chopped parsley
Salt and pepper to taste

Directions:
Sauté kielbasa in oil over medium heat until starting to brown, remove from pan (reserve)
In same pan, reduce heat; add onion, garlic, and herbs. Cook 2-3 minutes, add potatoes, stock and sauerkraut, bring pot to boil and reduce heat to simmer, cook until potatoes are soft.
Lightly puree soup with immersion blender, soup should be pureed yet still chunky.
Add reserved Kielbasa, heavy cream, mustard and parsley, return to simmer, cook 2-3 minutes.
Season with salt & pepper to taste.
Serve with dollop of sour cream. (optional)
