6 cloves garlic minced
╝ tsp. Red pepper flakes
2 T olive oil
4 ripe plum tomatoes peeled and diced
1 lb. bow tie pasta (uncooked)
2 lb. fresh spinach chopped
Salt and pepper

Directions:
Directions:
SautÚ and pepp flakes in oil for 2 min. Stir in tomato, reduce heat and simmer.
Cook pasta, save pasta water
Stir spinach into pasta water stirring until water returns to a boil. Drain spinach and toss in garlic- tomato mixture ass salt and pepper.
