3 egg yolks (from extra large eggs)

2 cups buttermilk

1 1/2 cup AP flour (King Arthur flour)

1 tablespoon sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

3 tablespoons soft butter

1 1/2 teaspoon vanilla

3 egg whites, stiffly beaten

Directions:
Beat eggs whites until stiff and set aside. Mix all dry ingredients together in a small bowl. In large bowl mix egg yolks, add small amount buttermilk and mix well, add some of the flour mixture. Alternately add buttermilk and dry ingredients, add butter and and vanilla and mix well. Fold in stiffly beaten egg whites. Cook on electric griddle set at 350 degrees, oil using a pastry brush, use about 1/2 cup per pancake. Serve with fruit compote or butter and syrup

We love these for Sunday brunch.. I also like them served with fresh strawberries.
Adapted from a quick bread recipe from the Betty Crocker Cookbook New Picture I received from my mom in 1967
Make sure the baking powder and baking soda are fresh- they have an expiration date
