2 cups whole wheat flour
2 cups whole rye flour
2 cups barley flour
1⅛ tsp. yeast
2 tsp. salt
2¾ cup water,
Baking stone or cookie sheet

Directions:
Directions:
Starting the night before, mix flours together, add yeast, salt and enough water to form a supple yet firm dough. Work the dough with wet fist for half a minute or so until it has a satiny feel.
Cover let rise at room temp. The bread will not bubble it will be noticeably softer. In the morning, gently punch the dough with wet hands. Cover and let rise again. After a few hours turn the dough onto a lightly floured board and gently shape into a oval or circle. Dust with flour and set aside to rise, slide onto the baking stone. Place in preheated 400º oven bake 2½ hrs. when done remove and let cool, bottom side up. do not slice till the next day. Flavor improves for several days after baking. Store in wrapped towel.
