3-4 cups rhubarb, chopped
2 T cornstarch (stirred into ¼ cup water)
1-½ cups sugar
1 tsp vanilla

Mix all together and cook until thick. Cool slightly.
 

Crust and Topping

1-1/2 cups quick oatmeal
1-1/2 cups flour
2 sticks margarine
1 cup brown sugar
1/2 tsp soda

Remainder for topping(optional):
Coconut
Nuts

Directions:
Directions:
Preheat oven to 350 degrees.

Pat 3/4 of crust into bottom of 9 x 13 inch pan. Pour filling over crust. To remainder of crust add coconut or nuts or both. Place over filling and bake for 30 to 40 minutes. Coconut browns easily so top of bars may be covered with aluminum foil the last 10 to 15 minutes of baking.
