Grilled Filet of Salmon with Pineapple Salsa

2 ea filets of fresh salmon, skin on or skin off, farm raised Atlantic or wild caught
2 Tbsp olive oil

Rinse salmon and pat dry with paper towel.
Season fish with your favorite spice mixture or simply use salt and pepper.
Heat grill to maximum heat, brush well and oil.
Grill salmon skin side up for 3-4 minutes, change angle to make a mark and cook an additional 1-2 minutes. Flip salmon over and cook until done to desired temperature or opaque in the middle, be careful not to overcook.
Serve with your favorite sauce, salsa, butter or accompaniment.

2 cups fresh pineapple, cut into large pieces, peeled, grilled and diced
½ red bell pepper, seeded and fine diced
1 ea Anaheim chili, fine dice
1/4 cup red onion, fine dice
2 Tbsp olive oil
1 tsp chili powder
1 juice of fresh lime
¼ cup chili sauce
½ cup fresh cilantro, chopped
Salt and pepper to taste
