4 cups white vinegar
3 cups sugar
1 cup water
1 Tbsp. whole allspice
3 dried red chili peppers
1 Tbsp. mustard seed
2 Tbsp. mix pickling spice
2 whole bay leaves.
2-3 lbs. small fish filets (bite size)

Directions:
Directions:
Combine vinegar, sugar, water, with spices.
Boil for 5 min..
Refrigerate till cool, save to add to packed fish in jars.
Put 2-3 lbs filets into bowl, cover with generous amount of pickling salt and water. Mix and refrigerate 48 hrs.
Rinse filets well in cold water.
Cover with white vinegar refrigerate 48 hrs.
Drain and discard vinegar.
In quart jars pack fish with layers of fresh red onions, pour pickling mixture to fill jar.
Refrigerate 48 hrs.
Will keep for weeks in refrigerater.
