1 lb. asparagus
2 T oil
½ C chicken broth
1 clove garlic,minced
¼ lb. prosciutto sliced
1 lb. fettuccine
2 C medium cream
1-2 C parmesan
2 egg yolks
2 T chopped parsley

Directions:
Directions:
Cut asparagus into ½” pieces. Toss asparagus in hot oil for 1 min. Add chicken stock, garlic, and prosciutto. When stock nearly evaporated, remove from heat.
Cook and drain fettuccine. Whisk together cream, egg yolks, cheese, salt and pepper. Pour over asparagus. Stir in parsley and cook over medium heat until slightly thickened. Toss sauce with fettuccine.
