1 - 4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
salt and pepper
any additional seasoning you like

Pound chicken breasts with the bottom of a wide jar or meat mallet until an even thickness. Season chicken on both sides with s&p or any other seasoning you desire (sometimes I use McCormick's Montreal Chicken). Heat olive oil and butter in a frying pan (that has a lid) over medium high heat. When pan is hot, place chicken in pan in a single layer. Cook for about a minute until lightly brown on one side. Flip each breast over and put the lid on the pan. Turn heat to low and set timer for 10 minutes. Do not lift lid. After 10 minutes, remove pan from heat but leave chicken in pan. Set timer for another 10 minutes, then tada, you have moist, tender, juicy chicken breasts that are not dried out!

You may also lightly dust breasts in seasoned flour before sauteing in the pan. I use about a cup of flour seasoned with 1/2 teaspoon Seasoned Salt. It is delicious.
