1 Chuck or Cross Rib Roast 4-5 lbs. (can use two roasts to make up 4 - 5 lbs.)
Large jar Salsa Verde - medium (you can use Herdez salsa verde or La Victoria salsa verde)
1 large onion chopped, optional
1/2 tsp. garlic powder
4 Tbsp. flour
1 tsp. cumin

Directions:
Directions:
Cook roast, covered in 275º oven, do not add any liquid. Bake for 4-5 hours or until it shreds easily. Mix in juices from the roast; add the remaining ingredients. Cook through over medium.

You can add in refried beans. Heat through with meat.

Serve with warmed tortillas, avocado, chopped tomatoes, lettuce, cheese, sour cream. Tastes yummy with cilantro rice and cilantro tomatillo buttermilk dressing (both recipes are in the cookbook).
