2 lbs zucchini, grated
1 small onion
2 cloves garlic, minced
1/4 C butter
1 C shredded Parmesan cheese
8 crushed saltine crackers
1 beaten egg
1/4 C milk
1 Tbsp dill weed
Salt & pepper to taste

Preheat oven to 325
Spray 1 1/2 quart casserole dish with non-stick spray

Cook zucchini, onion and garlic with a small amount of water until tender.
Drain well and mash together.
Add butter, saltines, egg milk and spices, stir and pour into baking dish.

Sprinkle heavily with shredded Parmesan cheese and bake for 30-45 minutes until golden brown.
