3 tbsp. Butter
2 Eggs, whisked
2 Carrots, peeled and diced
1 Small Onion, diced
˝ c. Frozen Peas
3 Cloves Garlic, minced
Salt and Pepper, to taste
4 c. Cooked and Chilled Rice
3 Green Onions, thinly sliced
3-4 tbsp. Soy Sauce, or more to taste
2 teas. Oyster Sauce
˝ teas. Toasted Sesame Oil

Directions:

Heat ˝ tbsp butter in skillet until melted. Add egg and cook until scrambled. Remove to separate plate.
Add an additional 1 tbsp. butter and add carrots, onion, peas, and garlic. Season with a generous pinch of salt and pepper. Sauté until onion and carrots are soft.
Increase heat and add another 1˝ tbsp butter and immediately add rice, green onions, soy sauce and oyster sauce. Stir until combined. Add Eggs and stir to combine.
Add the sesame oil and stir to combine and remove from heat.
