2 packages chopped spinach **Look for the square boxes of spinach** (very important that spinach is as dry as possible)
1 can Cream of Mushroom or Cheddar Cheese soup
3 eggs, separated
1/2 tsp each: curry powder, black pepper & onion powder
3/4 + 1/4 + 1/4 C (3 separate portions) saltines cracker crumbs
2 Tbsp butter + extra for pan

Directions:

Preheat oven to 350º.
Prepare 1 1/2 quart casserole dish: grease entire inside of dish liberally with extra butter
Sprinkle 1/4 C cracker crumbs into pan and tap to coat entire inside (crush extra, if needed)
Mix together soup, spices, beaten egg yolks and spinach; when fully mixed, fold in 3/4 C cracker crumbs.
Beat egg whites until soft peaks form then fold into spinach mixture until just combined - don't over-mix.
Pour into prepared pan, top with final 1/4 C cracker crumbs and dot top with butter.
Bake for 45 minutes, serve immediately.
