1 pouch Betty Crocker Authentic Cornbread & Muffin Mix
1/4 C fat-free liquid egg substitute (like Egg Beaters)
3 T no-sugar-added applesauce
1 12 oz pkg frozen ground beef style soy crumbles
1/2 C canned sweet corn kernels, drained
1/2 C canned black beans
1/3 C chopped onion
2 T taco sauce
1 T taco seasoning
1/2 t ground cumin

Preheat oven to 350. Mix together cornbread mix, egg substitute & applesauce. Set aside for topping. In lg pan spray with nonstick spray, cook onions & soy crumbles over med heat. Once crumbles thawed, add taco seasoning, cumin & 1/4 C water. Stirring occasionally, cook until water absorbed. Add taco sauce, corn & black beans; mix well. Pour mixture into lg round casserole dish sprayed w/non-stick spray, then cover with cornbread topping mixture. Bake 20 min or until top is golden brown & firm. 220 calories, 2.75 g fat, 630 mg sodium, 37 g carbs, 3.5 fiber, 8 g sugar, 16 g protein WW points-4
