Black Bean Burgers Recipe

Ingredients: 15 ounce can black beans, drained and rinsed 1/2 green bell pepper 2 cloves of garlic, peeled 1 large egg beaten 2/3 cup whole wheat breadcrumbs 1 Tbs. chilli powder 1 tsp. cumin salt and pepper to taste

Directions:In a large bowl, place drained and rinsed black beans and mash with a fork or potato masher until mostly mashed (there will still be some bigger pieces). Place the green pepper, onion and garlic in a food processor and process until finely minced. Squeeze extra moisture out of the veggie mixture (I use paper towels but cheesecloth would be great too) Add the veggie mixture to the black beans and add chilli powder, cumin and salt and pepper. Stir to combine. Add beaten egg and breadcrumbs and mix. Form into 4 patties.
Oil the BBQ or grill pan and grill for about 4 minutes per side. |

Notes: These are so flavourful and because it only makes 4 patties, I usually double the recipe and cook and freeze them. That way I always have one ready to put on a great bun and top like a burger. They can be a bit dry, so I like to put mayo, pickles and lettuce on mine. Because burgers are one of the all time favourite things, this alternative is much healthier so I can indulge without guilt and save the beef burgers for when I go to a restaurant.
