2-3 C cooked chicken (can use leftover roast chicken, rotisserie chicken from the store or breasts - whatever)
1 package Uncle Ben's wild rice, prepared (fast-cooking is fine)
1 can Cream of Mushroom soup
1/4 C milk
1/4 C wine (cooking wine/sherry or leftover white wine)
1 C sliced fresh mushrooms (or 1 small can)

Directions:
Directions:
Preheat oven to 350º
Spray a 2 quart or 9x13" baking dish with cooking spray
Prepare rice and cut cooked chicken into bite-sized pieces.
Mix all ingredients together and pour into prepared baking dish.
Cook, uncovered, for 30 minutes.
