Ingredients: For the Crumb Topping: ½ cup all purpose flour ½ cup rolled oats ½ cup light brown sugar or white sugar ½ teaspoon baking powder ½ teaspoon ground cinnamon ⅓ cup butter or margarine
For the Apple Filling: 5-6 large McIntosh apples, peeled an thinly sliced 3 Tablespoons butter, melted 2 Tablespoons all purpose flour 1 Tablespoon lemon juice ½ teaspoon vanilla, optional ½ cup brown sugar ½ teaspoon ground cinnamon

Directions:1. Preheat the oven to 350º F. For the Topping: In a medium sized bowl combine the crumb topping ingredients with a fork or a pastry blender until it resembles small crumbs or oatmeal. For the Apple Filling: In a small bowl, melt the butter in the microwave. Add the lemon juice and vanilla. Pour over the apples and toss to coat. Combine the flour, sugar and cinnamon and sprinkle over the mixture stirring until all the apples are coated. Spread apple mixture evenly in an 8 x 8-inch baking dish. Spread the crumb mixture evenly over apples. Bake for 30-35 minutes or until the topping is browned. Remove from oven and allow to cool for at least 15 minutes before serving. May be served with ice cream or whipped cream. |

Notes: I make this ahead and freeze as it is handy to pull out when company comes. You may substitute tapioca flour and I have used apple pie spice instead of cinnamon. If you are using store bought apples, you may not need as much flour to thicken the juice as they usually don't contain as much juice as the home grown apples. To save time, I use a food processer to slice all the apples at once.
